Thanks for the suggestions and thoughts and I had decided that Butyl tape would probably be my best bet so I placed some of that around the base of the inspection plate base and screwed it down.  Hopefully it works and like you said, if it does leak, it won't be much and it will just drain into the bilge and get pumped out.  We are only doing day lake sailing right now also, so we can always refill when we get back for the evening.
