Check your fuel and water separator filters.
It could be fuel starvation at load

You are correct, you will need to take an inventory of the cables that you will to connect your runs, over and above what came with the auto pilot.
Unfortunately those cables are pricey.
Take your time and plan out your installation to mitigate the long cable runs
Once you have the correct "runs" (cables) the install is, a piece of cake.
Just a side note.
In 1982 I purchased a belt driven autopilot form the U.K. which was the forerunner of the Raytheon Autohelm.
The Autohelm was ineffective while sailing. Motoring was the only time I used it.
The EV-100 works extremely well in sail & motor

BTW if you can afford it, go with 10mm Dyneema.
I switched all my sheets to Dyneema a long time ago.
Dyneema is expensive but worth 10 time the price

The P323 owners manual is on this site. It has every metric for every thing on the boat

I had a similar situation, I dropped a deck fill cover overboard
My deck fills are Wilcock & Crittenden.
Eventually I found out that W & C have proprietary threads, very hard to find.
I did find one at a salvage yard

The vendor did the job without having to remove the stern rail.
He came by the yard, measured, a week later (october) he installed it. About 2-3 hours
It looks like the it was built by Pearson
