Adding a fridge

So our Pearson has a gas leak near the tank and apparently, looking at old surveys on the boat, it has been this way for probably at least ten years.  In our little use of the boat so far, we have not had any need for an oven, we have cooked steaks and such fine on an electric skillet and the outside grill.   

So we have been considering just removing the stove and that space would make a great spot for a little like dorm fridge.  We are not going overnight or anything, the lake we are on is pretty small.  It would mainly be an asset to keep some things cold like meat and cheese on the boat when we are connected to shore power. 

Has anyone done this?
